Ingredients
COOKIES
1 cup unsalted butter – softened to room temperature
1 cup granulated sugar
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2 eggs – at room temperature
3 cups all-purpose flour
1/4 teaspoon salt
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
ALMOND FROSTING
1/2 cup butter – softened to room temperature (can use salted or unsalted)
2 1/2 cups powdered sugar
3/4 teaspoon almond extract
1 tablespoon milk – or heavy cream, if needed
Pink Food Coloring – you only need a couple drops
Instructions
To start, preheat the oven to 350°F and prepare a baking sheet by lining it with parchment paper or a baking mat.
Begin making the cookies by creaming butter and sugar in a stand mixer with a paddle attachment for 2-3 minutes. Then, add the eggs, vanilla, and almond extract, mixing until well combined. Incorporate the flour, salt, baking powder, and baking soda, and mix until everything is well blended.
Using a 1/3 measuring cup, divide the dough into round balls. Place around 6 dough balls on the prepared baking sheet. Gently press down on each cookie with the palm of your hand to form a thick disc. Bake for 9-11 minutes, or until the edges are set and the tops lose their shine.
Once baked, let the cookies cool on the pan for 5 minutes before transferring them to a wire rack to cool completely.
For the frosting cream the butter, then add powdered sugar, almond extract, cream, and a drop of pink food coloring. Beat until smooth.
Proceed to frost the tops of each cookie. These cookies are typically enjoyed chilled
Notes
Butter: If you use salted butter for the cookies, you can omit the 1/4 tsp salt.
Pink food coloring: I prefer using pink gel food coloring, but you can also opt for regular neon pink food coloring.
Sugar cookie dough balls: If desired, you can make the cookie dough balls smaller, just keep an eye on the cookies while baking and adjust the baking time accordingly. If you prefer flatter sugar cookies, flatten the cookie dough balls more.
Storing: To achieve the full Crumbl experience, store the frosted sugar cookies in an airtight container in the refrigerator. When refrigerated, they will stay fresh for 7 days. Alternatively, you can store these cookies at room temperature in an airtight container for 3-4 days.
Freezing: You can freeze the cookie dough balls in a freezer-safe bag or container for up to 2 months. When you’re ready to bake, take them out of the freezer and bake them while still frozen, but add a few extra minutes to the baking time. Another option is to thaw the dough balls in the fridge overnight and bake them the next day.
Make ahead: The frosting can be prepared several days in advance. Store it in the fridge in an airtight container and let it come to room temperature before frosting the cookies.
